1 tablespoon butter
1/2 cup diced red bell pepper
1/2 cup diced onion
5 large eggs
¼ teaspoon smoked paprika
¼ teaspoon black pepper
¼ teaspoon salt
200 g sausage (removed from casings) cooked or
140 g bacon, cooked and crispy
300 g crispy hashbrowns
200 g shredded cheddar cheese
5 burrito-size flour tortillas
Whisk the eggs and set aside. Dice the pepper and onion small and sweat them down in a medium pan on medium heat. When the veg are soft, add the eggs, paprika, salt and pepper. Scramble the entire mixture on low hear until eggs are just cooked through. Remove from the pan. Cook the sausage or bacon to your liking. Crisp up the hashbrowns or tater tots. Build your burrito.
