2 tablespoons vegetable oil
1 large onion, sliced 1 cm thick
2 bell peppers, sliced 1 cm thick (multiple colors)
700 grams chicken tenderloins or boneless, skinless chicken breasts, sliced into 1 cm strips.
3 cloves garlic, minced
2 tablespoons Fajita Seasoning
8-12 small soft flour tortillas
Heat 1 tablespoon of oil in a large frying pan over medium-high heat.
Add the vegetables and 1 tablespoon of fajita seasoning. Stir-fry until the vegetables reach your desired level of tenderness.
Remove the vegetables from the pan and set them aside.
In the same pan, heat another tablespoon of oil.
Add the chicken strips and sprinkle with 1 tablespoon of fajita seasoning. Cook until the chicken is fully cooked through.
Return the cooked vegetables to the pan and stir to combine evenly with the chicken.
Serve the mixture warm on flour tortillas.
