1 large egg white
1/2 cup milk
1/4 teaspoon vanilla extract
2 cups (240 g) all-purpose flour
3 (38 g) tablespoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
5 (70 g) tablespoons cold butter
Preheat oven to 220 C.
Line a baking sheet with parchment.
In a small bowl, stir together the egg, soymilk and vanilla. In a mixing-bowl, place the flour, sugar, baking powder, and salt.
Cut in the cold butter.
Add Fruit/Nuts Etc.
Make a well in the center of the dry mix. Stir in wet mixture to make a soft dough. Pat into a circle, 2 cm thick. Cut circle into six wedges. Place on baking sheet. Paint top with milk and sprinkle with sugar.
Bake for 18 minutes or until golden brown.
