1000g Chicken (skin on or off any parts!)
Preheat the oven to 220 C (425 F).
Pat the chicken dry with paper towels. Coat with a light vegetable oil.
Season all of your chicken pieces liberally with the spice mix.
Roast in the oven on a rack for 45 minutes or until the internal temperature is 75 C (170 F). Chicken thighs may require a higher temperature 80 C (around 175-180°F)
Brush with BBQ sauce and either place on a preheated grill to finish and caramelize the sauce or place back in the oven on broil for a few minutes to caramelize the sauce.
Watch it close either method as the sugars in the sauce will burn if you are not careful!
