12 cubes seedless watermelon cut same size as halloumi
3 heaping tablespoons of chiffonade of fresh mint
400g halloumi cheese, cut into 12 cubes
Freshly ground black pepper
1 lime halved
Soak wooden skewers so they don't burn. Make 4 skewers with 3 cines halloumi and 3 cubes watermelon each.
Spritz the skewers with a light oil.
Grill skewers until they have lovely grill marks. I used a charcoal grill, but a gas grill will be fine.
Remove from grill and sprinkle with the mint and lime juice upon serving.
