500 g mushrooms of your choice (cleaned and chopped)
3-4 garlic cloves crushed
1 tsp dried oregano/thyme
2 tbsp butter
Cheese of your choice, pictured is aged cheddar
salt and pepper to taste
chopped parsley or chives for serving
4 slices bread of your choice toasted
Preheat the oven to 200 C.
Heat a large frying pan over high heat then add some butter.
Fry the mushrooms in batches, until well-browned all over.
Add all the mushrooms back to the pan with their resting juices and add the garlic, herbs. Cook for 1-2 minutes. Season to taste.
Serve the mushrooms on toast and top with cheese.
Toast in the oven (or air fryer) for 5 minutes or until the cheese is bubbly.
Sprinkle with fresh herbs.
