450 grams skinless, boneless chicken breast in strips
2 tablespoons fajita seasoning (see recipe)
1 tablespoon vegetable oil
2 Jalapeños, sliced
2 red bell peppers, sliced
1 onion, sliced
8 medium flour tortillas
2 cups shredded Cheddar cheese
Sour cream
Salsa
Heat the oil in a large pan over medium heat. Stir in bell peppers, onion, and chicken. Season with the fajita seasoning. Cook and stir until the chicken and vegetables have softened, about 10 minutes.
Sprinkle cheese on half a tortilla. Layer half of each tortilla with the chicken and vegetable mixture, then sprinkle with cheese again. Fold the tortillas in half and place in a medium fry pan brushed with vegetable oil. Flip and brown the other side. Serve with sour cream and salsa.
