1 cup brown sugar
1/3 cup light syrup
1/3 cup water
150 g butter
1 tablespoon ground cinnamon
1 tablespoon ground ginger
1 tsp ground cloves
360 g. flour
1-1/2 tsp baking soda
Mix the brown sugar, syrup and water in a saucepan. Boil the mixture.
Add the butter and let it melt. Add the spices.
Allow the mass to cool without stirring.
Stir in the bicarbonate and flour.
Wrap the dough in plastic wrap. Let it cool in the refrigerator until the next day.
Set the oven to 175°C.
Work the dough smoothly on a floured table. Bake a test cookie to see if the dough holds up, if the cookie spreads, work a little more flour into the dough.
Roll out the dough thinly and measure out cookies. Place them on a greased tray or on baking paper. Bake the cookies in the middle of the oven at 175°C, 6-8 min.
