3-1/2 cups diced potatoes
1/3 cup diced celery
1/3 cup chopped onion
3/4 cup diced cooked ham
3 cups chicken stock
salt and pepper
5 tablespoons butter
5 tablespoons all-purpose flour
2 cups milk
In a large pot cook the onions and celery in a tablespoon of butter
on medium heat until they are soft. Add the potatoes and the rest
of the butter. Cook for an additional 5 minutes. Next add the flour
and cook until the flour is toasted. Add the chicken stock, milk and
ham and cook until the potatoes are soft, about 15-20 minutes.
