3/4 cup cornmeal
1 teaspoon salt
1 cup boiling water
3 tablespoons melted butter
1 cup milk
2 large eggs
2 teaspoons baking powder
Butter, for serving
Preheat the oven to 175°C (350°F). Grease a square baking dish or round casserole dish.
In a mixing bowl, combine the cornmeal and salt.
Gradually pour in the boiling water, whisking to remove any lumps.
Stir in 3 tablespoons of melted butter, then let the mixture cool for about 5 minutes.
Whisk 1 cup of milk into the cornmeal mixture.
In a separate small bowl, beat 2 large eggs thoroughly.
Whisk the beaten eggs and 2 teaspoons baking powder into the cornmeal mixture. Mix well using a whisk or electric mixer.
Pour the batter into the prepared baking dish.
Bake for about 35 minutes, or until the spoon bread is set and lightly browned.
Serve hot with plenty of butter.
