2 to 3 tablespoons extra-virgin olive oil
1 lb chicken breast diced
3/4 cup dried currants, or raisins
1 tablespoon curry powder
1 tsp ginger
1 large zucchini, diced
1 garlic clove, minced
1 cinnamon stick
1 teaspoon salt
½ cup carrots cubed
6 saffron threads
2 scallions, thinly sliced
1 can chickpeas, drained
2 tablespoons chopped Italian parsley leaves
1 can 14.5 oz chicken broth
10 oz instant couscous
1/4 cup pine nuts, or almonds toasted
Salt to taste
