Dressing:
2 garlic cloves, minced
1 tablespoon anchovy paste
2 tablespoons freshly squeezed lemon juice
1/2 teaspoon Worcestershire sauce
2 egg yolks
1/2 cup extra virgin olive oil
1/2 cup freshly grated Parmigiano-Reggiano
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Salad:
Romaine Lettuce
croutons
chicken breast cooked
grated Parmesan
Diced fresh tomatoes (optional)
Diced bacon (optional)
In a medium bowl, whisk together the dressing ingredients until well combined. I like to use my Nutribullet! Taste and adjust to your liking.
Chop and clean the lettuce, put in a large bowl with the croutons and Parmesan. Toss with as much or little dressing as you like. Top with the chicken and sprinkle with more Parmesan.
