Dough
2 tsp dry bread yeast
1 cup warm water
1 tsp sugar
1 tsp salt
I tablespoon olive oil
3 cups flour
1 egg for egg wash
Filling
650 g. ground beef or lamb
½ large onion grated
¼ cup lemon juice
1 tablespoon salt
1 tsp. pepper
300 g. crushed tomatoes
Dissolve the yeast in the cup of water a large bowl then add sugar. After the yeast blooms, mix in the flour and salt to form smooth dough.
Make 18 balls of dough around 5 cm in diameter and place on a floured surface covered in a tea towel. Let rise 2 hours. While oven is pre-heating to 200 C. degrees, make the meat mixture by combining all of the ingredients.
Roll out each dough ball into a circle and add some of the meat mixture to each “pie”. Bring each side of the dough to the center to form a triangle shape. Crimp to hold the shape (see above picture). Brush with egg wash and bake at for 14-16 minutes or until golden brown.
