500 grams pork sausage
12 large eggs
1 cup sour cream
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon ground black pepper
500 grams shredded potatoes
4 green onions
1/2 green bell pepper , diced
1/2 red bell pepper , diced
2 cups shredded cheddar cheese
Heat a large skillet over medium heat. Add sausage and cook until browned.
Remove the sausage and set aside. Add the bell peppers and onion to the same skillet the sausage was cooked in and sauté.
Lightly butter the inside of a baking pan. Combine the eggs, sour cream, milk, and salt and pepper in a large bowl. Pour into the mixture into the greased pan. Sprinkle in the shredded potato, sausage and vegetables.
Top with the shredded cheese.
Bake immediately at 175 degrees for 40-50 minutes or until the edges are set and the center is just barely jiggly.
