Cake:
(5) 175 g cream cheese room temp
1-3/4 cups sugar
5 large eggs room temp
2 1/2 teaspoons vanilla
2 teaspoons fresh lemon juice
Crust:
200 grams digestive biscuit crumbs
115g butter, melted
1/4 cup (45 g) Brown sugar
Topping:
1 cup sour cream,
1/4 cup sugar
1 tsp vanilla
Mix the crumbs, melted butter, and sugar together with a rubber spatula
in a medium bowl until combined. The mixture will be thick, coarse, and
sandy. Press the mixture into the bottom of the dish or pan and slightly
up the sides.
Preheat oven to 175 C. lightly butter inside of 9 inch spring form pan.
Press crust on bottom and sides. Beat cream cheese until fluffy. Add
sugar and beat until smooth. Add eggs one at a time. Mix in vanilla and
lemon juice. Pour into prepared pan, bake about 1 hour 10 minutes.
Let sit for 5 minutes. Mix together sour cream, sugar and vanilla and
spread over top. Bake 10 more minutes.
