1 tablespoon vegetable oil
1 sweet yellow onion, diced
3 cloves garlic, minced
1 chopped green chili pepper
2 teaspoons ground cumin
1 teaspoon fresh oregano, chopped
1/2 teaspoon ground cayenne pepper
4 cups chicken stock
3 cups chopped cooked chicken breast
3 cans white beans, drained
Heat the oil in a large pot over medium heat. Add the diced onion to the
oil and cook until onion is clear and tender. Mix in the garlic, green
Chile pepper, cumin, oregano and cayenne. Continue to cook and stir
the mixture about 3 minutes. Mix in the chicken broth, chicken and
white beans. Simmer 30 minutes, stirring occasionally.
