2 Cups Kosher Salt
4 lbs Boneless Prime Rib Roast
fresh ground black pepper
6 sprigs rosemary
6 sprigs thyme
Preheat the oven to 100 degrees C. Cover the bottom of a roasting
pan with a layer of kosher salt. Make a bed of herbs on the salt for
the roast to sit on. Season the roast with black pepper and set on top
of the herbs. Cover the roast completely with kosher salt. Roast in
the oven for 4-5 hours or until the internal temperature of the meat
reaches 63 degrees C. Remove from the oven and let rest 30 minutes.
Brush off the salt and carve.
