1.5 kilo potatoes peeled and halved
4 eggs cooked to hard boil and peeled
1/4 cup yellow onion diced small
1/4 cup celery diced small
1-1/2 cups mayonnaise
2 tablespoons yellow mustard
1/4 cup milk
1/2 teaspoon salt
1/2 teaspoon celery seed
1/4 teaspoon black pepper
pinch of paprika
Cook the potatoes starting in well salted cold water and bring to a boil.
Cook until fork tender and drain. Dice potato into 1 cm chunks.
Dice egg into 1 cm pieces. Put still warm potatoes, egg and onion into a large bowl. In a smaller bowl, whisk the mayo, mustard, milk, salt, celery seed and pepper. Pour dressing over the salad and toss to coat.
Taste and adjust seasoning. Chill for at least 4 hours and if you can let it chill overnight, it is even better! Sprinkle with paprika and serve.
