1 cups grated cucumber
3/4 cups plain Greek yogurt
1 tablespoons olive oil
1 tablespoons chopped fresh mint
1/2 tablespoon lemon juice
1 medium clove garlic, minced
½ teaspoon fine sea salt
Lightly squeeze the water out of the grated cucumber. Transfer the cucumber to a serving bowl. Add the yogurt, olive oil, herbs, lemon juice, garlic, and salt to the bowl, and stir to blend. Let the mixture rest for 5 minutes to allow the flavors to meld.
