1 kilo potatoes (Mjölig: Connect, Fontane, King Edward, Mandel, Matilda)
1 cup full fat milk
2 tablespoons butter
Salt
pinch of white pepper
Bake the potatoes at 170 degrees C for around 45 minutes or an internal temperature of 95 degrees C. I use a meat thermometer.
Warm the milk/butter mixture on the stove or in the microwave.
Remove the potatoes from the oven and allow to cool enough to handle. Peel the skin and halve to put through a potato ricer. Slowly add the warm liquid and stir until the desired consistency. Salt to taste.
