6 medium potatoes
3 Tablespoons vegetable oil
1/2 cup butter
1/2 cup bacon bits
1/2 cup sour cream
1/2 cup shredded cheddar cheese
1/4 cup milk
2 teaspoons salt
1/4 cup green onions, sliced
freshly ground black pepper
Pre-heat oven to 200 c. rub the potatoes with the oil and bake for
an hour or until soft. Cut each potato in half and allow to cool a bit.
Lower the oven temperature to 175 c.
Place butter, bacon, sour cream in a mixing bowl. Scrape the inside
of the potato out of the shell careful to leave a small rim of potato
for support. Put the potato insides in the mixing bowl. Put the shells
on a baking sheet.
Smash the potatoes into the bacon mixture assing the cheese, milk,
salt, pepper and onion. Fill the potato shells with the filling, heaping
it high. Bake 20 minutes.
